Why on the griddle
The griddle is the most direct way to cook a good cut: high heat, a short time and nothing to hide the flavour of the meat. The surface browns into a thin crust while the inside stays juicy, as long as it's cooked to the right point. That's why we prefer to serve the sauce on the side or on top at the end, so everyone can decide how much they want and the meat keeps its texture.
All our meats come with fries and your choice of sauce. If you're not sure which one to pick, ask us: we'll recommend the best match for each cut.
Which cut to choose
Iberian pork
Presa is one of the most prized Iberian cuts: marbled, tender and full of flavour. It's best cooked medium, not overdone.
Beef
For those after the classic taste of red meat. Tell us how you'd like it when ordering: rare, medium or well done.
Chicken and lamb
Chicken is the lightest option and lamb the most full-flavoured. Both go well with a punchy sauce.
And if someone at the table prefers fish, the seafood section has two options, also cooked on the griddle and served at the same time as the meats.
How you like your meat
Choosing the doneness is what changes a griddled meat the most, especially beef and Iberian pork. As a guide: rare is red and very juicy inside; medium is pink in the centre; and well done has no pink at all. Chicken is always served well done. If in doubt, medium keeps the meat juicy without being too rare for those who aren't used to it.
To complete your meal
Grilled meat goes very well with something to nibble first: some tapas or a salad to share whet the appetite without filling you up. You'll find everything on the full menu. And if someone in your group fancies something else, our milanesas and burgers come from the same kitchen.

How to get hereCuts with an Argentine accent
Two of our beef dishes come straight from the Argentine grill tradition. The entraña (skirt steak), 300 grams with salad and fries for 20,50 €, is a cut from the diaphragm much loved in Argentina for its intense flavour and juicy texture. The tira de asado (short ribs), also 20,50 €, with fries, tomato and green pepper, is the rib cut that never misses an Argentine barbecue, with the bone adding flavour. If you want a real grill experience, either is a perfect choice, and both pair beautifully with a provoleta to start.
The entrecôte and its sauces
The 300-gram entrecôte comes five ways: with tomato and peppers for 23,00 €, or with Roquefort, mushroom, red wine or pepper sauce for 23,50 €. All come with fries. Red wine sauce is the classic for beef; pepper is the most aromatic; Roquefort the most intense; and mushroom the mildest. If you'd like something simpler, the beef steak with peppers or tomato costs 15,50 €.
